Roasted Garlic Mashed Potatoes Recipe

February 14, 2013 By Lindsay 2 Comments

mashed potatoes

Last week, I posted the white wine sauce chicken recipe which I thought would be great for that Valentine’s Day dinner with your loved one(s). Since today is actually Valentine’s Day, I thought people might be searching for a quick side for that dinner. That’s why I want to highlight another recipe from Campbell’s Kitchen which just happens to feature the useful Swanson Chicken Broth again. You can purchase that stuff for the chicken and use it in this side. I think it’s great when I purchase such a universal product. I also happen to love mashed potatoes. So, I think this spin on the classic dish could be really tasty (especially if you happen to have leftover chicken broth). It’s roasted garlic mashed potatoes. Yum!

Ingredients

  • 1 whole bulb garlic
  • 2 2/3 cups Swanson® Chicken Broth Regular, Natural Goodness® or Certified Organic
  • 5 large potatoes cut into 1" pieces (about 7 1/2 cups)
  • 2 tablespoons chopped chives or green onion tops

Instructions

  • Cut off the top of the garlic bulb. Drizzle with about 2 tablespoons of the broth. Wrap the bulb in aluminum foil and bake at 350°F. for 1 hour or until it's softened.
  • Place the broth and potatoes in a 3-quart saucepan and heat to a boil over medium-high heat. Reduce the heat to medium. Cover and cook for 10 minutes or until the potatoes are tender. Drain, reserving the broth.
  • Mash the potatoes with 1 1/4 cups of the broth, 2 or 3 cloves of roasted garlic* and chives, if desired. Add additional broth, if needed, until desired consistency is reached.

Spiced Apple Cake with Orange Glaze Recipe from Musselman’s

January 22, 2013 By Lindsay 56 Comments

spiced apple cake

We were hit with a big snow storm on Thursday night while I was staying at my boyfriend’s house. It knocked out the power until Saturday night. Within hours of the power being back on, we made this lovely spiced apple cake using Musselman’s apple butter. Between the use of oranges, apple butter, and spices it’s a great winter treat to warm up with!

Note: we used whole wheat flour which made it darker and a little heartier. You can use a flour of your choosing, know it may turn out looking a little differently. I think it will probably be delicious regardless of the type of flour used.

I don’t typically like orange-flavored stuff. However, I really liked this cake. The orange glaze goes well with the cake. The different flavors compliment each other well. Plus, the glaze gave the cake a different consistency on top. Then again, I’ve liked every other thing I’ve made featuring Musselman’s apple butter, including the apple butter bbq sauce I made. My boyfriend also loved this cake since he is a huge fan of oranges. It was the perfect way to celebrate the return of the electricity.

Disclosure: I received the apple butter used in this recipe for free. No compensation was received. The opinions expressed are my own.

Kraft No-Fuss Turtle Cake Recipe with COOL WHIP Frosting

December 17, 2012 By Lindsay 107 Comments

No-Fuss Turtle Cake

As you already know, I simply love Kraft Foods. They make so many different products and all of them make my life easier. I recently had the opportunity to try out the new COOL WHIP Frosting and I made the No-Fuss Turtle Cake to do it. Check out the turtle cake recipe below and see just how easy it is to make. Plus, it’s simply delicious! Everyone in my boyfriend’s family really enjoyed it when I made it.

No-Fuss Turtle Cake

Isn’t that easy? The hardest part was waiting for the cake to bake and to cool before frosting. Seriously, it all smelled so good that it was horrible having to wait around for the cake cool. The cake was great. My whole boyfriend’s family would agree. They all loved it. We each had multiple pieces of it. It went really quickly. Even my boyfriend’s sister who doesn’t like overly sweet things (especially frosting) liked it.

Update: It appears that Kraft no longer makes this Cool Whip product. However, you can make your own chocolate Cool Whip frosting by combining a tub of Cool Whip, chocolate pudding mix, 1/4 cup cocoa, and 1 cup milk. Not as easy, but still easy enough.

Disclosure: I received coupons to try the frosting and a spatula for free. No compensation was received. The opinions expressed are my own.

Whole Wheat White Chocolate Cranberry Bread Recipe

December 1, 2012 By Lindsay 28 Comments

whole wheat cranberry bread

Today, I am sharing a recipe for Whole Wheat White Chocolate Chip Cranberry Bread for the Hodgson Mill recipe challenge. I received a bag of their whole wheat flour to create this tasty yet dense bread and can’t wait to share the recipe with you!

White Chocolate Chip Cranberry Bread

Fun fact: For years, I assumed that I didn’t like cranberries. Then, I finally tried them one Thanksgiving and realized that I actually really enjoy them. So, when this recipe challenge came out, I knew I wanted to include cranberries in my recipe. Then, I decided it needed something sweet as well to counterbalance the tartness of cranberries. That’s where the white chocolate chips come in. Without further ado, here’s my Whole Wheat White Chocolate Chip Cranberry Bread. Take a look at how pretty it turned out above. Then, read my recipe below.

Ingredients

  • 2 cups Hodgson Mill Whole Wheat Flour
  • 3/4 cup white sugar
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 cup chopped cranberries
  • 1 tablespoon orange zest
  • 1 egg
  • 2 tablespoons apple sauce
  • 3/4 cup orange juice
  • 1 cup white chocolate chips

Instructions

  • Preheat the oven to 350 degrees and prepare a loaf pan.
  • Chop up a cup of cranberries. Then, combine them with the flour, sugar, salt, baking powder and baking soda.
  • Grate the orange peel. In a separate bowl, bring together the egg, oil, orange juice and grated orange peel.
  • Combine both mixtures together and add-in the white chocolate chips.
  • Put the batter into a pan and bake for about 50 minutes.
  • Allow the bread to cool before eating.
Keyword Bread

It’s worth noting that the bread picture contained only 1/2 cup of white chocolate chips. I didn’t think that was enough, so doubling it seems good. Also, the whole wheat flour makes this bread very dense. It’s tasty and goes great with a glass of milk. So, what do you think of my creation? If you want to try it, I recommend you check out this Hodgson Mill Coupon to save $1 off the purchase of a bag of flour. Additionally, you should enter the Hodgson Mill Win a Grain Holiday Giveaway for your chance to win some Hodgson Mill products.

Disclosure: I received the whole wheat flour from Hodgson Mill for free and I am entered into a contest for posting this. No compensation was received. The opinions expressed are my own.
